  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons chopped fresh rosemary
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 large yams, peeled and cut in 1-inch cubes

Start your oven & preheat to 350 degrees. Line a pan with foil. In a large mixing bowl, add olive oil, honey, salt, rosemary & black pepper. Cut your yams into cubes, add them to your mixing bowl. Using a slotted spoon, remove all yams. Place them individually on the baking sheet. Bake for 45 minutes or until tender. Change the oven's temperature to 450 degrees, flip all yam pieces & cook for an additional 15 minutes or until the edges start to brown.
