  • Crust:
    • 1/2 cup confectioners' sugar
    • 1 1/2 cups all-purpose flour
    • 1 1/2 sticks unsalted butter, softened and sliced
  • Filling:
    • 1 (8-ounce) package cream cheese, softened
    • 1/2 cup granulated sugar
    • 1 teaspoon vanilla extract
  • Topping:
    • Fresh strawberries, kiwi slices, blueberries, raspberries
  • Glaze:
    • 1 (6-ounce) can frozen limeade concentrate, thawed
    • 1 tablespoon cornstarch
    • 1 tablespoon fresh lime juice
    • 1/4 cup granulated sugar
    • Whipped cream, for garnish

Set the oven to 350 degrees & let preheat. Start with the crust, adding those 3 ingredients together in a food processor until well mixed. Evenly pat the dough into your pie pan, making sure to press it in all the indentations. Bake for 10-12 minutes or lightly browned. For the filling, whip the 3 ingredients listed above together & spread onto the crust evenly once the crust is cool. Arange your fruits on top of this layer as you think looks best. Be creative! For the final glaze, take your glaze ingredients & mix together in a saucepan on medium heat for about 2 minutes or until the mixture is thick & clear. Using a brush, glaze the whole tart. Store in the refrigerator & serve with a scoop of whipped cream & enjoy!
