Caprese Salad with a Pesto Sauce

  • 2 Tomatoes 
  • Handful of Fresh Basil 
  • 1 packet fresh Mozzarella cheese
  • 1 cup Pine nuts 
  • 1 cup grated Parmesan Cheese 
  • 1/2 cup extra virgin olive oil 
  • Juice of half a Lemon

  1. Cut your tomatoes into about quarter inch thick slices. 
  2. In a medium sized mixing bowl, place your tomato slices & cover generously with olive oil and season with salt and pepper. 
  3. Cut your mozzarella into slices about the same thickness as the tomatoes. 
  4. On a large serving platter, or your individual plates, arrange the tomatoes and mozzarella, alternating between the 2. 
  5. For the pesto sauce, blend together your basil, pine nuts, parmesan cheese and olive oil until it is a paste consistency. 
  6. Squeeze in fresh lemon juice.  If it is too thick, add more olive oil. 
  7. Squeeze sauce over the tomatoes and mozzarella and garnish with fresh basil. 
  8. Serve and enjoy!
