Artisan Romaine Vegetable Crunch Dip

  • 1 2-count clamshell Tanimura & Antle Artisan® Romaine
  • 4 stalks Tanimura & Antle® Celery
  • 4 small ears of sweet yellow corn
  • 4 Tbsp olive oil
  • 2 Tbsp Herbs de Provence or Italian Seasonings
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 2/3 cup crumbled Feta Cheese

  1. Remove corn from ears. Clean, top and tail celery. Dice celery into small pieces. 
  2. Place celery and corn in large skillet. Drizzle 4 Tbsp olive oil over celery and corn, and heat on medium/ high. Stirring constantly add 1/4 tsp salt, 1/8 tsp freshly ground pepper and 2 Tbsp Herbs de Provence. Saute 4 -5 minutes. Add diced peppers and saute for 1 minute.  
  3. Remove from heat and add 2/3 cup Feta cheese.  Stir and place in bowl or garnish each Artisan Romaine leaf with dip.


To add a bit of spice to Vegetable Crunch Dip add ¼ tsp Chipotle sauce or 1-2 finely chopped Chipotle peppers

Serves 6 (2-3 leaves each with dip)
