"City Chicken" Pork Cubes on Skewers

Main ingredients:
  • 1½ lbs of city chicken (pork cut in cubes on a wood skewer)
  • salt and pepper
  • 2 eggs, beaten
  • 1 cup of seasoned bread crumbs
  • ½ teaspoon of paprika
  • 2 Tablespoons of Parmesan cheese
  • ½ cup olive or vegetable oil
For gravy:
  • ½ cup broth (chicken or beef)
  • 1-2 Tablespoons of flour

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large bag add your breadcrumbs, paprika and Parmesan cheese & shake to mix evenly.
  3. Beat your eggs in another bowl.
  4. Heat a skillet to medium high and once it is hot, add your oil.
  5. Season meat with salt and pepper to taste.
  6. Dip the skewered meat in the egg and then place in the bread crumb mixture. Shake & cover generously.
  7. Once your oil is hot, place your meat in the pan and turn the skillet down to medium. Brown on all sides. About 2-3 minutes on each side.
  8. Once the meat is browned, place in a baking dish and cover with foil.
  9. Bake until the pork is no longer pink inside, about 20 minutes.
  10. To make the gravy turn the skillet on to medium heat.  Add the broth to the skillet and break up all the browned bits that were left over.
  11. Add the flour just a bit at a time and whisk well so there are no lumps.
  12. Pour the gravy over the cooked meat. 
  13. Enjoy!
