Balsamic Strawberry and Chicken Pizza

  • 1/4 cup balsamic vinegar
  • 1/2 cup strawberry preserves/jam
  • sriracha to taste
  • 1 cup cooked chicken, shredded or cut into bite sized pieces
  • 1 1/2 cups mozzarella, shredded
  • 1/4 cup parmigiano reggiano (parmesan), grated
  • 1 pizza dough
  • 4 slices smoked bacon, cut into 1 inch pieces and cooked
  • 1/4 cup sweet onion, sliced
  • 3/4 cup strawberries, sliced
  • 1/4 cup cilantro, torn

  1. Reduce the balsamic vinegar in half by bringing it to a boil in a small sauce pan & then down to simmer for about 5 minutes.
  2. Take the strawberry jam or preserves, sriracha & mix with the reduced balsamic vinegar until you like the taste.
  3. Take 2 tablespoons of the sauce & mix it with the chicken. Use the rest of the sauce to spread evenly on the pizza dough.
  4. Distribute evenly the cheese, onions, bacon, chicken & 2/3 the sliced strawberries across the pizza.
  5. Cook in a preheated oven at 500F until the cheese starts to turn brown, usually about 8 minutes depending on your oven.
  6. Top with the strawberries you did not previously use & the Cilantro.
  7. Enjoy!
