Tasty Crispy Fried Chicken

Ingredients:

  • 4 pounds of chicken thighs and drumsticks
  • 1 cup buttermilk
  • 2 cups all-purpose flour for coating
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 2 quarts vegetable oil for frying

Directions

  1. Remove skin from chicken if you do not want it on. 
  2. Put flour, salt, pepper and paprika into a large plastic bag. 
  3. Take your chicken a few pieces at a time and dip them into the buttermilk & then place them in the plastic bag with the flour mixture. 
  4. Shake until the chicken pieces are completely coated. 
  5. Place the chicken on a baking tray & cover with cloth or wax paper.  Allow the flour to dry to a paste consistency. 
  6. Fill a large skillet with oil about 1/2 full.  Heat the oil until it is very hot & add as many pieces of chicken as the skillet can hold.  Allow coating to brown & reduce heat & cover. 
  7. Cook for 30 minutes and then return the heat to very high to crisp the breading.  Fry until crispy. 
  8. Place the chicken on paper towels to remove some of the grease.  If you have more chicken to cook, place the cooked chicken into an oven on warm until all is cooked (Do not put paper towels in oven). 
  9. Enjoy!
