St Patrick's Day Slow Cooker Corned Beef

  • 4 large carrots, peeled and cut into matchstick pieces
  • 10 baby red potatoes, quartered
  • 1 onion, peeled and cut into bite-sized pieces
  • 4 cups water
  • 1 (4 pound) corned beef brisket with spice packet
  • 6 ounces beer
  • 1/2 head cabbage, coarsely chopped

  1. Set your slow cooker to high.
  2. Add all vegetables & water except the cabbage.
  3. Place your corned beef on top of these & cover with the beer.
  4. Add the contents of the spice packet.
  5. Cover and cook for about 8 hours.
  6. When there is one hour left, add the cabbage, stir & continue cooking.
  7. Enjoy!
