Garlic and Lime Chicken Breasts

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tablespoon minced garlic
  • 4 chicken breast halves with skin and bones (about 2 pounds)

  1. Take your lime juice, garlic and oil, whisk all together in a large bowl, adding a good amount of salt and pepper.  Throw in your chicken, shaking to cover evenly. 
  2. Marinate chilled for 2 to 24 hours, flipping 1 or 2 times. 
  3. Place chicken on a baking pan, skin up & discard the marinade. 
  4. Sprinkle with salt & pepper & roast for 25-30 minutes. 
  5. Broil for 2 minutes, until skin is crisp. 
  6. Serve & enjoy!
