Banana Pancakes topped with Banana Slices & Walnuts

  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed

In a medium mixing bowl, combine flour, sugar, baking soda & salt. Once dry ingredients are mixed well, add in milk, eggs, bananas & vegetable oil. The batter should be a bit lumpy. In a frying pan or griddle on medium heat, add a small amount of oil. Pour or ladle about 1/4 cup of batter to the hot surface per each pancake. Cook until done and both sides are golden brown.
