Creamy Mushroom Soup

Ingredients:

  • 1/4 cup unsalted butter
  • 2 pounds sliced fresh mushrooms
  • 1 pinch salt
  • 1 yellow onion, diced
  • 1 1/2 tablespoons all-purpose flour
  • 6 sprigs fresh thyme
  • 2 cloves garlic, peeled
  • 4 cups chicken broth
  • 1 cup water
  • 1 cup heavy whipping cream
  • 1 pinch salt and freshly ground black pepper to taste
  • 1 teaspoon fresh thyme leaves for garnish, or to taste

Directions

  1. Start stove at medium to high heat, add butter & mushrooms with a pinch of salt.
  2. Allow mushrooms to let out some of their juices & adjust heat to low.
  3. Cook for 15 minute or until mushrooms are golden brown & continue to stir.
  4. Add the onions & cook for 5 minutes or until they are soft & translucent.
  5. Stir in flour & mix for 2 minutes.
  6. Combine Thyme into a bundle & add garlic to the mixture.
  7. Mix in water & chicken stock.
  8. Simmer for one hour, then remove Thyme bundle.
  9. Blend the mixture of ingredients until the soup is consistently smooth & thick. Return to your pot & add cream.
  10. Serve & add salt & pepper to taste.
  11. Enjoy!
